Energy Bars (gluten-free) for sustenance
Preheat oven to 350-degrees.
Combine the following:
1/3 cup quinoa flakes
1 cup allergy-free granola
1/4 cup each shelled hemp seed and golden flax seeds
1/8 teaspoon cinnamon
1/8 teaspoon salt
Pinch nutmeg
1 cup dried fruit, cut into small pieces
1/4 cup either Canola oil or Coconut oil
1/4 cup molasses
Mix all dry ingredients, toss in dried fruit. Whisk together the Canola and Molasses [or molasses and Coconut oil]; mix well with the dry.
Transfer to 8 x 8-inch baking pan, lined well with parchment paper. Use a spatula to push down and into sides and corners.
Bake in center of oven for 30 minutes; them remove and allow to cool to room temp.
Place in fridge for about 2 hours. Lift out of pan; cut into quarters, then thirds.
Store tightly in fridge - if it doesn't ALL get eaten first!!
